About the owner

Hello, my name is Penelope. I was born and raised in Hastings. I am a trained crêpier, specialising in traditional crêpes and galettes from Brittany. Cooking has always been my passion, and I love creating food that brings people together.

Proud of my French roots, I aim to share the flavours, warmth, and simplicity of French cuisine through every crêpe I serve.

Buckwheat

We source our buckwheat from Court Hayes who grow and mills buckwheat flour on their family farm in Devon. Inspired by traditional buckwheat growing in Brittany, they began cultivating the crop in 2010 and now mill it on-site using a granite stone mill. By controlling every step from seed to flour, they produce a soft, flavourful buckwheat flour that is naturally gluten free.

Ham


Ham is at the heart of a great galette complète, so quality really matters. That’s why it is sourced from Beak & Tail Butchers in Hastings, trusted suppliers who have worked with us from the very beginning and share our commitment to exceptional ingredients.

Cider

Our cider (served in a traditional cider bolée) is from Norman Hunt & Sons, a family-run farm in East Sussex that has been growing organic traditional cider apple varieties on their Ashdown Sand orchards since the 1930s.

Cheese

At Crêperie by the Sea, we love cheese — it’s a key ingredient in our buckwheat galettes, so we make sure to use the very best. We’re lucky to source delicious French cheeses from The Cheese Man, a local, family-run Sussex company passionate about promoting high-quality, locally made cheeses.
